Zucchini Time Again

Zucchini time again
Run for the hills. It's zucchini time again. This is the time of year your neighbors will run for the hills to escape your "kindness and generosity" giving them tons of zucchini...

Whether it's in a stir fry, fritter, or cake, zucchini takes on the flavor of the dishes you prepare. Oh yes, it does. We fooled my friend's husband who hates zucchini by making him a mock apple pie from zucchini slices. Of course flavored with the cinnamon, sugar, butter, and surrouned by a rich tasty crust, he thought he was eating the "best apple pie" he ever tasted. We had to tell him it was zucchini because we burst out laughing when he made that declaration.

Zucchini is a versatile veggie and good for you too.

  1. I've never tried zucchini in a pie. Do you use the same amount of zucchini as you would apple slices?

    Recently, for son's graduation party, I made a zucchini salad, consisting of bite size chunks of zucchini, onions, tomatoes, and cucumbers. Lightly coat with italian dressing.

  2. I love your garden pics. Fresh veggies out of the garden are so wonderful. We are in a terrible drought in West Texas and it's been so hot that watering didn't even help. My poor garden just fried in front of my eyes with only five small tomatoes and two peppers. No beans or zucchini either. Glad your garden is doing well. Eat some for me ... lol.

  3. Susanne, thanks for the zucchini salad idea. I will try that. Sounds great for a warm summer evening. I must admit I never made the pie, but I know my friend loaded it up with the zucchini slices.

  4. Dianne, thank you. I love taking pictures of the garden. At the end of the season I try and put them all together into a slide show and see the progress. The drought in TX is making news up here. So sorry it is ruining your garden and probably the farmers' crops. Wish I could mail you some goodies from here. Thinking of you.
